Whole cluster pressed, this sparkling Pinot Noir contains only the Coeur de Cuvee (the "heart" of the cuvee), less than half of the 154 gallons per ton pressed. The coeur cut delivers higher acidity and a more focused fruit character, contributing both to complexity and longevity. Tirage bottle on April 27, 2013. Disgorged August, 2015.

Tasting Notes

Rich, bold, and heady, with a pithy edge to the crushed berry, talc, and brioche flavors. Ends with a racy minerality, with a bright acid framework that gives focus to the breadth of the flavor profile. A generous bubbly that strikes a balance between California opulence and classic French elegance
